My oldest son made All-Stars this year and it has kept us BUSY! Last night’s game was cancelled due to weather so I was able to head to the kitchen. After rounding up three of my five children, we decided on spaghetti for dinner. Then i ran into a little problem…I had no spaghetti noodles. 😦 After gathering my thoughts I was able to throw together an accidental lasagna.
You will need 1-2 pounds hamburger, 1 medium Green Bell Pepper, 1 container Ricotta cheese, 1 2 cup bag Mozz. cheese, 1 bag Parmesan, 2 (6 oz) cans tomato paste, 1/8 tsp garlic powder, 2 pkg McCormick Thick and Zesty Spaghetti Sauce Mix, 1 bag Italian blend cheese, 1 egg (not pictured)
Preheat oven to 425 degrees. Brown your hamburger and bell pepper together. When it is almost completely browned add the garlic powder. Stir to combine and continue to brown. While the hamburger is browning, go ahead and cook pasta according to package directions.
After you have drained the meat mixture, add back to skillet and add the spaghetti sauce mix, tomato paste, and about 2 cups water. My husband likes the sauce thicker, so I only add 1 cup of water. Stir to combine and set aside.
Spoon a small amount of sauce in the bottom of a Pam sprayed baking dish. Drain noodles and add 3 noodles in bottom of dish. Top with half of sauce, half of cheese mixture. Repeat layers one more time.
Serve with garlic bread and a salad. Enjoy!!!
